Snickers Slice




Snickers Bars are my downfall.. my one favourite chocolate bar that calls out to me every time i enter a supermarket or corner shop. As of late i have been caving into the temptation and not being able to resist the Snickers Bars calls. So i went home and did some research and started experimenting and this is what i came up with... A healthy alternative to a Snickers but with all the flavour, just minus the calories! This  recipe tastes delicious. Although I myself am not a huge fan of dates i absolutely love this recipe!

This recipe has 3 different layers and is done in 3 quick and simple stages.

Bottom Layer

1 cup of cashew nuts
(raw)
1 cup of seedless dates (i look for the ones with the least amount of sugar as dried fruit tends to be high in sugar. Most dates are 68g of sugar per 100g. Prunes are around 32g of sugar per 100g so these could be an alternative - although i haven't tried this out yet). 
1/2 teaspoon of natural vanilla extract
A pinch of salt

Put all the above ingredients in a food processor and blend until smooth and mixed well. The mixture should hold together once pressed between your fingers. Press the mixture into a loaf tin (i use a spoon to press the mixture down and even it out). Line the tin with baking paper so that the edges are overhanging, this makes it easy to remove. Put into the fridge and let it begin to set while you move onto the next layer.


Middle Layer

1/4 cup of cashew nuts
(raw)
A pinch of salt

Put the cashews and salt into the food processor together and pulse so that the cashews are roughly crushed. Get out the first layer from the fridge and put the cashew and salt mix evenly over the first layer. Once again i used a spoon to push the cashews down so they stick into the first layer. Put the loaf tin back into the fridge to set these 2 layers.


Top Layer 

1/2 cup of  coconut oil
(i use organic)
4 tablespoons of cacao powder (this gives it a bitter dark chocolate taste - so you can use less cacao powder for a less bitter taste)
2 tablespoons of agave nectar (or raw honey/maple syrup) 

Once again put all the ingredients into the food processor until smooth and fully combined. It should look like a chocolate spread. Get the tin out of  the fridge and using a spatula evenly spread the chocolate mix over the second layer. Put the mixture back in the fridge and leave for a couple of hours to set.

Once the slice is set use the overhanging edges to gently remove from the tin. Slice and enjoy :)!
I put some baking paper at the bottom of a container and place the slice in the container and store in the fridge - as the chocolate top layer melts quickly. Then slice when required!
