Cauliflower Base Pizza


I am a huge pizza fan, however we all know pizza is not that good for you! But, who said pizza has to be a naughty treat...this recipe is a tasty and healthy alternative for pizza.

I have made this recipe many times and it always works well, but there are a few tips that should be followed.
* Make sure you drain the cauliflower really well once cooked - get as much liquid out as possible (i always use a sieve and push hard on the cauliflower with a spoon).
* Spread the pizza base out thin so it takes less time to cook and will become crisper.
* The longer you bake the base for the crisper it becomes.
* The base is not always really crispy and can often be quite soft, but still tastes delicious- this depends on the above tips and how long you end up cooking it for.

You can use anything for the topping! I use different toppings every time i make this pizza because it all depends on what i have in the fridge at the time. So please feel free to use any toppings you prefer.

Ingredients

PIZZA CRUST

1 medium sized cauliflower (grated - by hand or food processor until rice sized but not pulverised - i always use a greater).
100g of cheddar cheese (you could use any cheese - goats cheese, mozzarella or if your adventurous use a healthier alternative like these vegan recipes http://www.organicauthority.com/eco-chic-table/diy-whole-food-dairy-free-cheese-substitutes.html)
1 egg
Salt and pepper to season

TOPPING

2 tablespoons of paleo tomato sauce (http://savannaadams.blogspot.co.uk/2014/10/paleo-tomato-sauce.html)
1/2 a large courgette/zucchini (grated) 
A handful of spinach
2 cloves of garlic (diced)
4 large button mushrooms
Feta (diced) and a small sprinkle of mozzarella
1 chicken breast (diced and cooked before putting on the pizza)

Method

1. Preheat the oven to 200 degrees and line a baking tray with baking paper.

2. Put the grated cauliflower in a microwave proof jug or bowl with some water. Cook on high in the microwave until cauliflower is soft (12-15 minutes).

3. Once the cauliflower is cooked drain the water through a sieve. Run a spoon over the cauliflower until there is no liquid coming out of the cauliflower.

4. Leave the cauliflower to cool slightly.

5. While the cauliflower is cooling, dice and cook the chicken (i fry the chicken in coconut oil). Then set aside.

6. Mix the now slightly cooled cauliflower with the cheese and egg in a bowl. Add salt and pepper to season and mix.

7. Using a spoon or your hands shape the mixture into a large pizza base (about 1cm thick - not too thick or it takes forever to cook and not too thin or it'll break apart).

8. Bake the cauliflower crust for 30-35 minutes or until firm and golden, then remove from the oven.

9. Add the toppings you would like to your pizza - spread the paleo sauce on the base, evenly spread out the diced garlic, then evenly spread the grated courgette, add the mushrooms, then the cooked chicken, top with feta and spinach. Lastly i add a small amount of mozzarella.

10. Put the pizza back into the oven for a further 15-20 minutes until toppings are cooked and cheese is golden.

11. Cut and serve! Perfect with some sweet potato fries.
