Raspberry Biscuits




If you are an avid jam maker you can add your own jam to this recipe. I tried making my own healthy version of raspberry jam but failed miserably so that is still a work in progress.

These biscuits are a mouthful of goodness! They are super tasty and the jam gives them a nice sweet taste. As i am still experimenting with making my own jam, for now i use diabetics jam as it has a sugar substituent and  no added sugar. You could use any flavoured diabetic jam!

Ingredients 

1/4 cup of desiccated coconut
1/2 cup almond meal (if too wet add more - you can be generous it won't muck up the recipe)
1 teaspoon of cinnamon
1/4 teaspoon of baking powder
A pinch of salt
1 egg
1/4 a cup of coconut oil (or olive oil if you do not have coconut oil)
1/2 teaspoon natural vanilla extract 
1/4 cup of agave nectar (or raw honey/maple syrup/rice malt syrup) 
Diabetic Raspberry Jam (or any flavor - you can use normal jam if you wish)

Method

Preheat your oven to 180 degrees and line a baking tray with baking paper.
Mix all the dry ingredients in a bowl making sure they are all combined.
Place all the wet ingredients in a separate bowl and whisk together to combine.
Mix dry ingredients with the wet ingredients until fully combined.
Take small amounts (teaspoon size) of the mixture (quite sticky) and roll into balls in your hands.
Place balls onto baking paper and in the middle of the ball gently press your thumb to create a small well (where the jam will go). I flour my thumb so it doesn't stick to the balls.
Fill the well in each biscuit with a small teaspoon of jam.
Bake in the oven for 10-12 minutes until they are golden (they will be moist as the almond meal keeps them this way - you can use coconut flour instead of desiccated coconut to make a drier batch).

I store these in a air tight container and enjoy with a hot cup of herbal tea.
