Meatballs with Tomato Sauce


These meatballs are delicious and healthy! I just use the Paleo Tomato Sauce  recipe as a base for my meatball sauce. If it's not saucy enough i add tomato paste/tomato passata or canned tomatoes. I usually serve my meatballs with wholewheat couscous and steamed green vegetables. 
Wholewheat couscous is always a great alternative to pasta and rice. I always cook my couscous with a stock cube and a 1 (couscous) to 1.5 (water) ratio.  So for 1-2 people i boil 1 cup of water with a stock cube and add 1/2 cup of couscous. 

Ingredients 

Sauce
Extra tomato paste/passata or canned tomatoes 
Basil

Meatballs
500g of lean mince (5% fat or less) 
2 garlic cloves (chopped)
A few basil leaves (chopped)
1 egg
1/3 c of almond meal
Salt and pepper
1 teaspoon coconut oil (for frying)

Method

1. I always make the Paleo Tomato Sauce first, so click on the link for the recipe and instructions. 

2. In a large bowl add the mince, egg, garlic, basil, almond meal and salt and pepper. Mix together with a fork until egg and all ingredients are combined. 

3. Roll mixture into desired sized meatballs (the smaller the quicker they cook), i usually roll them into a medium size. 

4. Heat coconut oil in a large pan over medium heat. Add meatballs and brown on all sides. 

5. Once meatballs are browned add the tomato sauce. Stir until all meatballs are covered. Reduce heat and simmer for 15-20 minutes. 

6. While meatballs are cooking i boil the jug and add 1 cup of water to a saucepan with a stock cube and bring to the boil, then add 1/2 cup of couscous (1 whole cup is enough for about 3-4ppl). Stir and cover for 5minutes on low heat. Take off the heat and let stand for a further 5 minutes (with the lid on).

7. Once meatballs are cooked through serve with couscous and steamed greens.
