Banana Chocolate Chip Muffins - Gluten Free



Yummy! These banana choc chip muffins are gluten-free and can be refined sugar free, if you omit the choc chips - they are delicious just as banana muffins too. 
This recipe makes exactly 12 muffins. 




Ingredients

3 ripe bananas
1/4 cup coconut oil (melted)
1/4 cup maple syrup (or honey)
1 large egg (room temperature is best)
1 teaspoon vanilla extract
1 1/2 cups gluten-free flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt 
1/2 cup dark chocolate chips (I like lots of chocolate chips so I usually use around 3/4 cup)



Method

1. Preheat oven to 180. Lightly grease a 12 muffin tin with non-stick cooking spray or butter. 

2. Mash the bananas in a large bowl with a fork until only small lumps remain. 

3. Add the oil, maple syrup, egg and vanilla to the bananas and mix well.

4. Add the remaining dry ingredients (except the chocolate chips) to the wet ingredients and gently combine, careful not to over mix. 

5. Add the chocolate chips and just combine by carefully mixing once or twice.

6. Fill each muffin tin about 2/3 full with mixture, which should perfectly use all the batter. 

7. Bake for 15-20 minutes until the tops bounce back when touched.
