Baked Banana Chocolate Chip Doughnuts



You need a good doughnut pan to make any baked doughnuts! I got mine from Mighty Ape (check this link - they're only $17).

If you love banana cake and banana choc chip muffins you will love this recipe!

Makes 12 - 14 doughnuts

Ingredients

1 cup mashed ripe banana (2 bananas) 
1/2 cup sugar (use raw cane sugar or coconut sugar for cleaner option)
1/2 cup greek yogurt
1/2 cup butter (melted)
2 eggs (at room temperature)
1 teaspoon vanilla extract
2 cups flour (use spelt flour or almond meal for cleaner option)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips (I use dark chocolate)

Topping (Optional)

1/4 cup sugar (use raw cane sugar or coconut sugar for cleaner option)
1 tablespoon cinnamon


Method

1. Preheat oven to 180 and grease (I use rice bran oil spray) your doughnut pan.

2. In a bowl mix all the wet ingredients (mashed banana, yogurt, melted butter, eggs, vanilla). Mix until combined.

3. Add the dry ingredients to the wet ingredients (sugar, flour, baking powder, baking soda, salt). Mixed together until just combined.

4.  Finally add the chocolate chips and mix until just combined.

5. Add the batter to the doughnut pan making sure you only fill until about half way (for thinner doughnuts) or three quarters (for thicker doughnuts - I like the thicker ones).

6. Place in oven and bake for around 15 - 20 minutes. Keep an eye on them they may take less time or longer.

8. Mix together topping ingredients if you are using them and coat over the doughnuts.
